ISOLA DEI NURAGHI I.G.T.

Indicazione Geografica Tipica

Grapes: Nasco 80%, Vermentino 20%

Vineyards and training method: Vineyard of Tanca S'Arai (Serdiana); Is Crabilis (Ussana) low espalier, traditional alberello.

Age of the vineyard: 25/30 years, depending on the varietal.

Soil Type: Medium hill, clayey, calcareous, rich in texture, 150/180 m above sea level

Vinification, Maturation, Ageing: The grapes are dried naturally on the plant for 15 days. At the gathering of the grapes follows the vinification at controlled temperature with the addition of selected yeasts. After the over-ripening, the fermentation takes place in small stainless steel vats at controlled temperature, around 20°. After a light clarification, the wine is left to rest for a few days. The refinement lasts six months in stainless steel and then the wine is bottled six months before being put on the market, to complete the finishing process.

Tasting: Golden colour with an antique brilliance. Full and intense aroma with evident notes of ripe fruit, dried fruit and honey. Soft concentrated taste, definitely sweet, but balanced, with a pleasant almond final taste, good olfactory persistence.

Matching and service: Pastries with almond or walnut base, mildly spicy cheeses. Serve at 10/12° C, uncorking the bottle right before pouring.

TALES FROM THE WINERY

Assoluto means absolute and absolute is the Nasco which is absolutely Sardo (Sardinian)... that's why we gave this name to the wine.

Assoluto is the wine for the friends. Traditionally a glass of Nasco was offered the the visiting guests in each family and Pala family too.

To make it fresher than the traditional one, we added a bit of Vermentino passito in the same way.

The Crus

Entemari, S'Arai, Assoluto, these are the grand crus from the Pala family and for the people able to wait and to keep them for a longo time in the cellar.

they are the resume of more than sixty five years of our history and of our family in the wine production. Obtained from the most important and indigenous grape varieties of Sardinia these are wines of exceptional quality produced only in perfect harvest/vintage and in a very limited quantity.

I FIORI

Sardinia is inside of every single I Fiori bottle of wine. I Fiori, the flowers is the meaning because every single varietal is one of the most important of the Island and is one of the most famous DOCs of Sardinia: Monica, Nuragus, Vermentino and Cannonau are their names, these are all flowers. The same flowers that che Mario Pala dedicates to his family. Nuragus for his daughter Elisabetta, Cannonau for the son Massimiliano, Monica is for the daughter Maria Antonietta and the Vermentino for Rita, Mario's wife.

SILENZI

Visiting the vineyards in our area means very often find themselves alone with the nature and in a land where the silence (Silenzio) is broken only by the sound of the wind or the singing of birds. These are the silences (Silenzi) of this land and these vineyards from where this three great wines of undisputed quality are made.
