Grapes - Monica 50%, Sangiovese 50%.
Vineyards and Method of cultivation - Vineyards in Sernorbì, traditional sapling.
Age of vineyard - 20 years.
Crop Production - 80 quintals to the hectare.
Soil type - of medium hill, calicified clay 150/180 m. a. s.l.
Vinification, refinement - Vinification "in pink" of the red grapes after a partial maceration for twelve hours, after which follows a light cleaning of the must. The fermentation follows at a constant temperature of 16°C. for two weeks in stainless steel vats. A small filtering of the most precedes the bottling when is still young to preserve aroma and freshness.
Tasting - Brilliant light rosé. Intense aroma of little red fruits with floral notes. Elegant and intense bouquet, suave flavour, with a pleasant nose-palate harmony and nice acidity. Medium structure and persistence.
Suggestions for use - As an aperitif, with fried seafood, i.e. calamari or fried vegetables. Seafood starters, risotto, pasta with vegetables and light main courses. Serve at 12° C. uncorking at the moment of decanting.
